[Objective] To explore the characteristics of homemade ice cream and the relationship between material and coagulum and the taste of homemade ice cream. [Methods] The author used the machine to homemade the ice cream with many material and coagulum, making the ice cream analysised them by their taste, sensory evaluation and the characteristics. [Results] Based on the conclusion that homemade ice cream had a good character with a good taste, it would be popular in the future because it was more hygienic, clean and fresh and taste is related to personalized and diversified adjustment. Here, the ice cream mixer is key for the function of ice cream maker, which can determine the flavor of ice cream, production efficiency and customize, but also can reduce the production cost.
